Light And Healthy Carrot-Apple Spice Soup

Planning weekly meals can be cumbersome, time-consuming and difficult.  Trying to come up with healthy recipes that your family will love is even more difficult.  However, if you want to instill healthy living in your children, you have to practice it yourself.

Here’s a light and healthy recipe you and your family are sure to love.

Carrot-Apple Spice Soup – Makes approximately 5 cups


2  tablespoons of olive oil

1  small chopped onion

1 1/2 cloves of garlic – minced

2  tablespoons of fresh ginger – grated

1  small or large apple depending on how sweet you like it

1 1/2 pounds of peeled and chopped carrots (approx 5 cups)

4  cups of vegetable broth

A small pinch of nutmeg

A small pinch of cinnamon

Salt and pepper, to taste


Take a large pot and add the olive oil and the chopped onion then cook for five minutes over a low to medium heat until your onions are translucent.

Then add the minced garlic, the ginger, the nutmeg and the cinnamon and cook for another few minutes on low.

Then add the chopped apples and carrots and cook for a few more minutes.

Now you can add the vegetable broth, stir and bring it to a boil.  Then reduce the heat and let it simmer for 20 minutes or so.

Here ‘s the tricky part – so please read this carefully.  Transfer the mixture to your blender (depending on the size of your blender, you may have to separate the mixture and do this in several batches) – NEVER allow the mixture to go beyond half a blender full; otherwise it might burst out of the top.  In addition, you’ll need to allow the steam to vent through the top of your blender as well.  After ensuring all of the above has been observed, you can now blend your soup until it’s smooth.

After you’ve finished blending, you can add the salt and pepper to your taste.  If you’d like a thinner soup, just add a little more of the broth.
